Flavours of zesty lemon and fresh kaffir lime with crunchy acidity.

The Grape Variety

The fruit was predominately hand picked and whole-bunch pressed with juice then immediately run-off skins. The clear, racked juice was inoculated with a selected aromatic yeast strain. Ferment was cool, slow and controlled to maximise retention of fruit flavours. The wine then spent a number of weeks on primary yeast lees prior to bottling. It was bottled with an alcohol of 12.5% a TA of 9.6 and a pH of 3.01.
