This is a finer style of dessert wine with abundant honeydew, marmalade and citrus flavours.

The Grape Variety

The botrytis infected fruit had a significant percentage of shrivelled berries making pressing slow and limiting juice yield. Due to the very high sugar concentrations fermentation of the juice was a slow process taking some weeks. The wine was bottled with an alcohol of 8.0%, TA of 8.12g/l, an acid level of 3.12 and a residual sugar of 147g/l.
