The Wine

Lifted aromas of white peach and citrus, defined elegant oak. Bright and complex palate. Crisp acidity provides length and freshness. Excellent persistence of flavour.

The Grape Variety

Pressed gently to get the best free-run juice, it then underwent partial natural fermentation in barrel. Oak used was a combination of 30% new, 20% 2nd use and the balance older French oak barriques. A proportion of the wine was left in barrel on lees (dead yeast cells) and stirred each fortnight prior to final blending. 100% of the wine went through malolactic fermentation in both barrel and tank. The wine was bottled with an alcohol of 13.0% a TA of 6.2g/l and a pH of 3.22.
